Indian Ladder Farms has wonderful local yellow tomatoes for $1.50 a pound. You can't beat that. We've been eating them for weeks, and I wanted to try something different tonight. Here's what I can up with.
About 10 medium yellow tomatoes (or red, I suppose)
20 fresh sage leaves (or however many you have)
3 cloves garlic
Olive oil
Gray salt (or sea salt if you don't have gray)
Black pepper
You will need some kind of grill basket that will keep the tomatoes stable while you flip them. Put grill on high and let heat while you do the prep.
Halve the tomatoes across the middle (not end to end)
Put them in a large bowl where you can gently toss them
Pour on enough olive oil to coat them well, toss
Sprinkle a good amount of salt, don't be shy, toss some more
Sprinkle on pepper
Crush the garlic and add to the bowl
Mince the sage and add to the rest
Toss again so everything is well distributed and coated with oil and herbs
If you have time, let sit for 20 minutes, if not don't worry about it.
Put the tomatoes in the grill basket and place basket on the grill skin side down. Put the cover down.
Cook until tomatoes start to soften and the skins start to turn color. Flip. Cook a few minutes more, until tomatoes are soft, a little wrinkled and have those yummy black bits. Remove from grill and carefully lift them out of the basket. Put them on a plate skin side down if possible.
